Mother was right -- again!!
Breaking news, folks! My mother (bless her opinionated soul) was right again!! She LOVED bacon and eggs and refused to give them up, even when we "enlightened" daughters insisted and kept hiding the bacon grease, so she couldn't season her green beans with it.
I just heard on CBS this morning - a new study shows that sodium nitrite may actually be GOOD for us! Good grief! Do you mean to tell me that we deprived our mother of her beloved bacon all for nothing??
According to this morning's news, the original studies showing the harmful effects of sodium nitrite were guilty of using "weak data." Well, if the darned data is WEAK, I just wish they wouldn't publish the results and get us all in an uproar!
The CBS report admitted that there were better, more healthy sources, for sodium nitrite -- leafy green vegetables and carrot juice, to name two. Carrot juice...yum, yum.. Let's see, what aisle in Town & Country will I find that on?? My brother Tim always made his own, but it didn't stop him from getting rheumatoid arthritis. (If it isn't one thing, it's another.)
I checked the term sodium nitrite on Wikipedia, and this information was less reassuring. Our favorite online encyclopedia had this to say about the subject:
"A principal concern is the formation of carcinogenic N-nitrosamines by the reaction of sodium nitrite with amino acids in the presence of heat in an acidic environment. Sodium nitrite has also been linked to triggering migraines.[1]
Recent studies have found a link between high processed meat consumption and colon cancer, possibly due to preservatives such as sodium nitrite.[2][3]
Recent studies have also found a link between frequent ingestion of meats cured with nitrites and the COPD form of lung disease.[4]"
ACK!! Maybe the solution is NOT TO LISTEN TO THE MORNING NEWS!
Whatever the case, that's the latest information in the continuing struggle for consumers to make sense of our modern world. Once again, I have the feeling that I should go live in the woods and eat twigs and berries... Of course, I'd have to be sure to wear my copper-lined snake boots!
